Ingredients:
800 g Noodles ( nouille)
1 whole chicken ( poulet)
400 g whole mushroom (
champignons)
For the sauce:
75 g Butter
75 g Flour
1 L scalding milk ( lait
chaud)
little of grated nutmeg
( muscade rapée)
salt and black pepper.
Cheese for topping (
parmesan, or you might use mozzarella or emmental)
Directions:
Cook the chicken in
water, start with cool water, with some bay leaves and whole black pepper....
when chicken is done, tear it into small bite sized pieces, in the meantime cook
the noodles in boiling water for about 4 minutes, drain. put these two in a
baking pan and mix well with the mushrooms.
To prepare the sauce ,
cook the flour in the butter, until it still of white color , add a little of
the hot milk and beat well, continue doing this until you reach a thick sauce,
you may add some of the chicken cooking water instead of adding all the milk,
this will enhance the sauce flavors, Don't forget to add the nutmeg . Just
before turning the heat off the sauce, you can add fresh cream .
add the sauce to the
rest in the baking pan ( shallow casserole) and top with cheese , bake in
hot oven ( 375◦ F)
for 15 minutes.
