Moolookhieh ( moolookhiyay)


Originating from Egypt this recipe names origins means " a dish to kings"

serves 4

Ingredients:

500 g ( 1 lb) Jew's mallow ( leaves)
500 g chicken meat
500 g Beef or Lamb knuckle
150 g onions
50 g chopped fresh coriander
50 g chopped Garlic
oil for frying
50 ml lemon juice

Directions:

Wash the leaves well, take them off the stems and let dry on a piece of towel overnight. 

cook the meat ( boil in salted water, the lamb or beef should be cut into small cubes, the chicken torn into pieces) Keep the boiling water of the lamb.

Cut the Jew's mallow into fine strips ( arranging every bunch of leaves and cutting them )

 in a deep cooking pan ( pot) fry the onions, garlic and coriander in the oil for a few minutes, add the cooking liquid of lamb, bring to a boil then add the Jew's mallow leaves and lemon juice and the meat, let cook for 5 minutes

Serve hot with rice, and top with a dressing made of vinegar and chopped onions. also add some toasted pita bread on top.
