Cock-a-leekie

Ingredients:

  • 1  boiling chicken, with it's offal organs ( except liver)
  •  1  bouquet garni ( 1 bay leaf, thyme, parsley sprigs..)
  • 200  g  leeks cut into long strips
  • 4  plums soaked overnight, seeded and cut 

Directions:

In a boiling pot, cover the chicken with water, add bouquet garni  and bring to a boil, reduce heat and simmer for about 20 hours. in the cooking time , add the leeks as well as water if necessary to keep the chicken covered , Add the plums just before 20 minutes from the end of the cooking process.

 

When serving, take the chicken and the bouquet garni  off the water, and clean  the chicken  from the offal organs , then  tear the meat into bite sized pieces .Adjust the seasonings, and serve hot.
