Rice and lentils 

 

Ingredients:

150 g Lentils
500 g Water
200 g Rice
50 g Olive oil
120 g Onions
salt and pepper

Directions:

Cover the lentils with water and let cook about 40 minutes over low heat. Then pass through a food mill. Add rice and let cook until tender.

In a pan fry the onions in the oil until brown, add to rice and lentils, and let cook for about 15 minutes

NOTE: you must keep on stirring constantly, or it will scorch.

 

serves 4

to be served with white onions , and cress or wild cucumber.
