Pomegranate Khoresh with Chicken

 

(an Iranian Dish)


Ingredients:

 

2 large onions , peeled and thinly sliced

2 frying chickens cut into 6 pieces

45 ml oil

2 1/2 cups of pomegranate juice

400 g shelled walnuts, very finely ground

10 g sugar

5 g ground saffron

50 g chopped squash, courgette

30 g fresh pomegranate seeds

salt

 

 

Directions:

Brown the onions and chicken in the oil, add the salt and pomegranate juice. Mix well then add the walnuts, sugar , saffron , squash ( and a tablespoon of water to dissolve the saffron in before adding it)  Cover and simmer for two hours, stirring occasionally, ( if you feel it is being too thick, you may add warm water to thin it)

just before the meat is done taste it to adjust seasoning, serve hot and decorate with the pomegranate seeds, serve with  saffron rice
