To make sure you use all the dough, while cutting it, recombine the leftovers and roll them again to form new cuts

Mix by hand the butter and sugar in a bowl until well combined. Add the egg and vanilla, and continue to beat until fully incorporated.
Add gradually the sifted flour and fold until fully combined. Roll the dough on a floured parchment sheet, then transfer on baking tray, and let it firm up in the fridge for 10 minutes.
Remove from fridge and cut using a round shaped cookie cutter, don't forget to make a hole in the middle of the upper piece.
preheat the oven to 190°C, and bake the individual cookies for 14 minutes. When done, take them out, allow them to cool and then spread jam on the bottom biscuit, and then top it with the upper piece, sandwiching them together, sprinkle with powdered sugar.
